Can I get parts back from my dismantled car?

No. Once we have bought the car it is ours, and it goes to the facility, which keeps the parts it recovers. If you want to keep anything, remove it before collection and tell us when you ask for a price, because it changes the figure.

What paperwork do I need to have a car dismantled?

Photo ID and, if you have it, the V5C logbook; the driver checks both. Tear off the yellow V5C/3 slip before handing the logbook over, then tell the DVLA you sold the car to the motor trade: online with the V5C reference number (keep the slip with your records), or by posting the slip.
